Easy quarantine eats

As much as I love snacking on junk food, I’ve discovered that too much, especially during quarantine, makes me feel more gross than happy. If I’m going to be lounging on the couch all day rewatching Teen Wolf, I might as well be eating something that makes me feel a little healthy. Here are a few of my favorite snacks and meals to eat during quarantine that are not only healthy and delicious but also easy to prepare!

Smoothies

Smoothies are a great option as snacks because they’re so customizable. You can throw in whatever your heart desires and have a refreshing drink that will keep you feeling full throughout the day. It can also be a good way to get your daily serving of veggies without actually having to taste them.

Making a morning smoothie before yoga has become part of my routine, so here are a few variations you can try at home. All of these ingredients can be found at your local grocery store and measurements aren’t exact. 

Mixed Berry Smoothie

1 handful of blueberries

1 handful of strawberries

1 whole banana (sliced)

2 handfuls of spinach

2 spoonfuls of Greek vanilla yogurt

1 cup of almond milk 

Mango Banana Smoothie

2 handfuls of frozen mango 

1 handful of strawberries

1 handful of spinach

1 whole banana (sliced)

2 spoonfuls of Greek vanilla yogurt

1 cup of almond milk

Strawberry Smoothie

2 handfuls of strawberries

2 spoonfuls of Strawberry yogurt

1 handful of spinach

½ cup of almond milk

Tip: Add in some chia or flax seeds for an extra source of fiber!

Poke Bowls

My favorite healthy meal to make at home to lift my spirits during this time of social distancing is a poke bowl. There’s no need to go to a poke bowl restaurant when they are so easy to make at home. Once you start you may not be able to stop making them because not only are they delicious, but they’re aesthetically pleasing too. 

Poke bowls are another customizable dish, so feel free to mix it up. All you need is your choice of veggies and toppings, and a side of protein. All of these ingredients can be found at a local Walmart or Asian grocery store. Here’s my recipe

Kayla’s Poke Bowl

Steamed rice (type of rice and amount are your choice)

⅓ cup of boiled soybeans (I love edamame, so sometimes I use more! It’s up to you!)

½ a carrot (shredded)

½ an avocado (diced)

½ a cup of your preferred protein (I switch between salmon, chicken, and shrimp! I bake or pan-fry mine.)

Soy Sauce

Yum Yum sauce

Furikake seasoning

Directions:

Scoop some rice into your bowl. I use steamed Jasmine rice. Drizzle soy sauce over your rice. 

Then, place your shredded carrots, diced avocado, soybeans, and protein on top of your rice neatly. 

Drizzle some Yum Yum sauce on top of everything.

Finally, top it off with Furikake seasoning (I like using a lot) or just some seaweed flakes and sesame seeds. 

(Make sure to take a picture of your masterpiece.)

Tip #1: If you make one batch of protein for the whole week, making poke bowls daily is easy! Of course, you can always leave out a source of protein if you want to make it vegetarian.

Tip #2: If you haven’t already, invest in a rice cooker! You can make one big batch of rice to last you the whole week and you can use rice in so many other dishes!

Spinach and Mushroom Omelet

If you’re like me, you enjoy breakfast at any time of the day. This one is delicious and super easy.

Directions

Butter and heat your pan to medium heat. Mix two eggs together, season with salt and pepper, and pour into the pan. Sprinkle a handful of spinach and mushrooms on top of your eggs. Let cook for about 2 minutes then flip one side of your egg to create an omelet. Let cook for another 2 minutes. Voila!

Tip: Add some sliced avocados on top to avoid having warm, mushy avocados on the inside. 

Yogurt Bowls

Yogurt bowls are another customizable snack that can be made in less than 3 minutes.

  1. Grab any kind of yogurt you like as your base.

  2. Add in any kind of fruit you like and slice them.

  3. Finally, top with granola!
